Like, will they play with a ball and climb on me? Do females ever cuddle/sit in the shirt?

They will climb all over you, but aren't the cuddly sort. Gerbils are very energetic and curious and so are constantly moving around. Also males tend to be slightly more subdued than females. It's very rare they'll sit in a shirt. More likely they'll jump out to run around or chew a hole in it!

I have both guinea pigs and rats in my room, and altough tye rats are completely sealed in a cage,m the guinea pigs have no roof (they don't jump out) and safing my room is pretty much impossible (I have a hundred things, and I love machines, I have a bunch) Do gerbils jump without thinking? (run out into the air?)

When they're young and don't know you really well they can do crazy things. Don't take chances. When they get older and tamer they can be easy to handle, ride on your shoulder or hands or whatever. A good way to play with them and get them used to you is sitting in a dry bathtub with them. Not too many ways to get in trouble. They might run up your pant legs and such.

If you don't have a bathtub you'll need to get creative. Maybe a big storage bin. Or a sheet of coroplast (corrugated plastic) that you can fold flat when not using and open into a playpen when needed. Maybe a closet you can fit in with your gerbils. Whatever works for you.
If they're older already you'll have a better idea how crazy or calm your gerbils are going to be. You can always work on improvement regardless.

We had one who was really tame, he used to sit in your pocket and look out. He would quite happily stay there.
