I'm pretty certain both my gerbils are doves, correct me if I'm wrong. Here's a picture of Nimbus, but they're identical. aa self colored belly CC no colorpoint EE no gold color gg gray color pp ruby eyes sp non-spotted Is this correct? I'm assuming that they are not heterozygous for the traits where their phenotype is dominant because both parents and all the pups were doves.

Just because there were no other colours doesn't mean other genes might not be there. Both parents have to carry the same recessives for there to be an effect.
There is no need to mention any genes for spotting in a solid colour gerbil. There's no such thing as a sp gene... just wild type (unspotted).
I assume the eyes really are red. They look black here but that can happen due to lighting.

Ahh thank you! I'm not planning on breeding either of them, I was just curious. But yeah, that makes sense!
