I was thinking about breeding two blacks and that makes an all black litter and I think it might be hard to tell them apart which I want to do so would it be safe to tie different color strings like embroidery floss or something around their neck or somewhere

The floss isn't a good idea, they could get it caught on something and strangled. I got one of my gerbils from a breeder and she put a small dot of paint on their tails (non toxic of course) to tell them apart.

No strings. Ever. If you need to tell them apart, you can use nontoxic marker or paint, or cut a patch of fur short in a particular place.
