When my pups are born and are old enough to eat regular food I want to help tame them with treats. I was thinking pumpkin or sunflower but if you have better suggestions you can tell me. Where would I get these kinds of seeds and what kind am I looking for like gardening pumpkin seeds or regular unsalted sunflower seeds or do I need to buy from a pet store if they even sell them there

You shouldn't need to train your pups with treats if you have handled them throughout their tiny lives.
If they are used to you holding and handling them as they grow - they should be well adjusted little mites. If you don't handle them until they are older, then you have to start from scratch in your 'training'.
And anyway, I find younger gerbils aren't so interested in 'treats' - they are more interested in everything else going on...

Really? My pups were relatively interested in treats by the time they were five weeks old. Though I did, of course, handle them throughout their lives as well. As far as what type of treats, if you do find that your pups want them, then I just used sunny and pumpkin seeds, as well as Cheerios.

Well sunflower hearts and pumpkin seeds always generate interest - as well as raisins and brocolli.
Millet or loose budgie/finch seeds seems to be eaten by the pups, but I don't use it as a treat myself, I just give it to them as standard.

My gerbils - of all ages - go nuts for plain rolled oats. Even when they have plenty in their dish (it's in their mix), they love being hand-fed oats.
