Well they have a moult about 8 weeks which changes their colour if they are Nutmegs or DE Honeys, and all subsequent moults can also change the colour slightly. Mind you I had a Nutmeg who didn't get his speckly coat until over 6 months, the 8 week one just didn't impact him.
My CP Nutmeg female changed at 8 weeks to show points and then again about 6 months I think, getting darker all over. I hope she changes every time!

Sounds like I should take regular pics of my Nutmegs (so I can keep track/remember their colour progress), they're just finishing up their first moult and are already significantly darker than they used to be.
I can't really help with the original question, but I 'think' it depends on the colour of the gerbil in question, some colours might continue to change throughout their lives (even subtly) and some colours might remain the same once they reach adulthood.

Yeah,I love it when the moults come through. They can make them look so different for a while.
Especially within the first year, from pup to grown up. I had a BEW pup recently who moulted in dark points only at 8 weeks, but now he is colouring up nicely all over, I am waiting to see if he is spotted, as up to now his head has been totally white anyway.
