I am relatively new to gerbil care, and am in need of clarification... What kinds of foods am I able to give my sweet girl? Can she have meats, fresh fruits and veggies? (I grow mint, catnip, dill, bell peppers, cucumbers, potatoes, green beans, parsley, tomatoes, potatoes, and onions, are any of these safe for her to eat?) I hate giving her packaged and stale petstore stuff... I make treats for my rabbit and wish to make my gerbils as well. Any help or links to places with answer and complete list of safe food would be fantastic!

Fruits & veggies are ok. I'm not sure about some of the ones on your list, but just be aware that citrus fruits and candy are not ok (however google says oranges are okay so someone correct if I'm wrong). albertarodents.com/?p=81shows some of the things gerbils can eat. THis is not a list of all things of course, just some.

I've given my gerbils cooked chicken, but very rarely. Meats that we eat have fat and protein content that is off the scale for gerbils - infrequent treats only.
Just about any fruit or veggie is safe in small amounts. These treats contain a lot of water that could cause diarrhea if given too much. This includes berries, squash, cucumber, bell pepper, tomato. Some varieties of beans are toxic if uncooked, but string beans, peas, and snap peas are OK.
Potatoes are fine if cooked - never raw and never the greens.
Herbs and spices can be toxic - I'd say no. Onions and garlic are also toxic.
Seeds and nuts are great treats - sunflower, pumpkin, squash, almonds, walnuts, and pecans
Unsweetened breakfast cereals like multigrain cheerios and multigrain chex are my gerbil's favorite treats.

Not sure where you are from, but most gerbil food we use is dry. These kind of pre-made gerbil mix bags: They can live their entire life on it healthily. And anything else (veg etc) is given as an odd treat now and then.
