So yesterday I went to my cage I rarely give my gerbils fruits and vegetables as they never eat or nibble on them. So yesterday I tried giving them carrots. Before I went to bed i cut 2 little chunks and put in there food dish. Then I woke up to see if they toke it ate it. And it wasn't there but im not to sure they ate it. But im a little worried as if they didn't eat it or if they knocked it down and got mixed in the shaving i looked around and didn't see it. I just don't want it to start rotting. So what should I do?

This is why we only recommend tiny raisin sized amounts of fresh food at a time in the tank. Not only do smaller amounts suit their tiny tummies, but it means uneaten food doesn't rot in the tanks.
Many people only offer fresh food in their run or when out of the tank to prevent this type of thing. Others just put larger amounts of food in knowing that they can then find them again in 20 minutes time - like a half apple. No gerbil is going to be able to pick that up and bury it somewhere before you take it back out.
Most small pieces of veg will go hard and dry after a few days in the tank anyway so shouldn't cause a problem - just stick with drier veg (not pears and bananas etc) and you should be fine.

That are greedy little beasts with new food. I've read you can't overfeed a gerbil, but I have my doubts.
