I feed my gerbils lots of food and sunflower seeds and sometimes an occasional carrot but they're still skinny. What's goin' on here?

I've had the same problem. However, my gerbils are also fairly young, not yet full-grown...and I noticed that the coat and body of one of the gerbils has grown longer. If your gerbils are still relatively young, then they probably are still growing *up*, and not yet growing *out*. I'm no expert though, anyone else have a good analysis?
My gerbils are really skinny too, though I feed them plenty. I recommend not giving them tons of sunflower seeds though...they are high in fat and low in nutrition. Treat them like candy. Pick out the sunflower seeds, and hand-feed one or two a day per gerbil. This will make sure they eat other things in their food dish, too, so they stay healthy.

Younger still growing gerbils are indeed most of the times skinny! They use their energy for their growth!
After that they will most likely gain weight! If they eat a lot, are lively, good fur, not become thinner, etc. than I should not worry if I was you!
