Schimmels are rare in general, and Dilutes are rare in the US. Other than that, it mostly depends on where you are.

It's all in the genetics. Fur color is determined by a set of two genes, which can have any combination of a dominant gene and three recessive genes (regular, Himalayan, Chincilla). Fur color is also affected by eye color genes sometimes, and the optional spotting/mottling gene as well. Agouti is the most common in theory. Wild gerbils all have that fur color, as do a significant number in captivity. The second most common is black (same as agouti, with two recessive fur color genes) in my experience, followed by Argente Golden (agouti with two recessive (red) eye color genes). Generally, the colors requiring Himalayan or Chinchilla genes will be less common. You can look up fur color genetics on Google or refer to a gerbil handbook to get an idea about rarity of other types. One example is the following site: www.thegerbils.com/colors1.htm
