I have heard of poutine but never had it. Cheese curds, are they like cottage cheese, or more like halloumi or feta? Because I don't like cottage cheese but I love halloumi. Chips and gravy sounds good.
Cheese curds are usually made out of new cheddar. They are firm in texture, but its fresh cheese so not a very strong taste (although still some flavour). If the cheese making process had been allowed to continue I believe they would all be pressed together into a block of cheese and aged for more flavour. Of the cheeses mentioned they would be most similar to halloumi.
I'm gonna let someone else answer your red velvet question. Just wanted to provide some more information.
