I’ve started to scatter feed my two gerbils but how much food should I scatter each day? Is there a general recommendation per gerbil to make sure they get what they need each day?
I felt more assured just providing a big bowl of food so I could see how much they got and ate, but I keep hearing that scatter feeding is better and more interesting for them.

I usually feed mine a tablespoon daily for each gerbil. I don't usually scatter feed though unless I can't find the bowl, just because I figure mine fling it around enough anyway. If you find a lot stashed when cleaning the cage there's probably too much, but it's okay for them to have a little extra.

Like barryozzy said, I like to scatter feed as well. I usually scatter the seed and dried veggie mix around the tank and I leave some of the pellet food in a dish. This way if they don’t get enough food for some reason then there’s always the pellet food.

How is it going with the scatter feeding g? The amount can depend on what you're feeding them. I did the same as you and asked the question a while back as we were giving too much and there was so much left in their bedding. Some foods need a different amount. The food I use suggests a lower amount so I went with that, and then change it to suit whatever they have left from the previous day. If you scatter it somewhere they aren't likely to dig up then you can check and adjust the amount to suit.
