Nesting next to the divider doesn't often happen and it isn't required for a successful introduction. It's good that they're sleeping in each others nests.
I had to destroy Tilly and Wispa's nests a few times when moving dividers, reducing bedding and so on and it was always interesting to see where they made the new nest. Towards the end of the process, Tilly would sometimes sleep next to the divider, and sometimes not, though Wispa never would.
I'd say 60cm is about the optimal size, yes. Not too cramped but not too big that they can avoid each other either.

Should I be reducing the bedding as I go along? I've taken some bedding out but I was loathed to mess about lots when I reduced it to 60cm. However, I'm still wondering if it's too much bedding. I've been adding a few sheets of toilet paper each day to give them something to do and it now means their nests have piled up a little. The rest is quite low and they still can't dig/tunnel, but as they are mostly sleeping I am worried about them being buried out of sight.
Do they generally sleep more when in this environment?

By the end it should be shallow, so you can either reduce it gradually or all in one go.
Yes, they tend to sleep more because there's not much else to do.

The substrate is still mostly at 1" but their nest bit is piled up which I was worried may be too high, but I guess they'll always do that. There's a corner where there's nothing from them trying to dig so I think I've got it to a reasonable level now. Hattie keeps trying to climb the divider and jumps up so much when I open the lid to scatter feed and change their water. Although I can't decide if this is a good sign or bad.

What country are you in? Anyway, as per this post by her (I've bolded the relevant line):- I'm worried about jinxing it but I have a little girl lined up from the RSPCA! It's still a trek but a lot closer than anything else we've seen as she's the right age and has just lost her sister. They have reserved her as we are away on holiday so we pick her up the day after we get back. I'm very excited, but also very nervous. Now I really do need to read up on everything to give them the best start. My partner is going to make a divider when we're back but I'm a bit worried we haven't got the right materials. Need to look and see what mesh everyone has used so that we get the right stuff.

I'm in the UK, North West. YEs I've seen the op has tracked down a lone female, but they also mentioned they had come across a few lone males in their search - hence me asking.
