I would NOT use the PVA glue in your link for gerbil toys. In the product description, it states "Not suitable for children under 3 years of age".
Elmers non-toxic white school glue is the safest option for making gerbil toys. It's been eaten by schoolchildren for decades with no apparent ill effect! Unless you are gluing plastic or metal, white school glue should work fine for most gerbil toys. The only drawback is that you may have to clamp or hold the pieces together until the glue sets.
The hot melt glue is generally non-toxic per-se, but it poses the same risks to rodents as any soft plastic if swallowed - intestinal impaction. I would prefer to use Elmers, but if I had to use hot melt glue on something in the tank, I would apply it sparingly and cut off any excess strings and globules with a razor after it dried.

Elmer's us a US brand; I'm not sure you can gt it in the UK. Any PVA glue marked as non toxic should be fine.

Oh oops ah okay, so any PVA that says non toxic is deemed safe for gerbil toys as long as they aren't excessively chewing the gluee?? xx
