Mom gerbil had babies last night, I don't know how many though, because I gave her a box to have her litter in. I know I shouldn't touch her for the next 48 hours, but can I handle her after that? I really want to weigh her to estimate how many pups there are.

It's best to avoid causing any stress for a week. If she's an outgoing, confident gerbil you could handle right away, but if she is one who tends to try and run when you go to pick her up or who dislikes handling it's better to wait at least one week. I'm also not sure that weighing will give you a super accurate idea of pup number. Just like in people, not all "baby weight" gained during pregnancy is actually the weight of the babies.
