hmm, personally i wouldnt use it as if they try to chew it the clay wont break down in the gerbils stomach so it may cause a block or make it hard for them to pass it out? You may be able to just use it at play time? This is just a guess though so i would wait until someone else comes up with something

I looked up this particular product. It's made by Prang Art and is non-toxic. I can't find ingredients, but based on Amazon user reviews, it appears to be a cellulose based air drying compound. This means that, once dry, you will have to seal the hideaway inside and out to make it waterproof (gerbil pee, poop, and scent gland secretion-proof), as well as protect it from mold growth. Acrylic based paints and a heavy duty acrylic top coat/sealant would be my choice since they're non-toxic and easy to clean up with warm water.
Keep in mind that air dry times depend on room humidity, and can greatly vary depending on project thickness. It must be completely dry before you paint and seal it. My art teacher recommended rolling out a couple of flat pieces of modeling compound as thick as the thickest part of the project. These test pieces could be broken in half later to check for complete dryness prior to painting the actual project
There are so many different air-drying and oven-drying modeling clay compounds on the market, and I'm not familiar with most of them. I can't tell you that this particular clay is the best one available in terms of durability for making a gerbil hideaway, but it should work and it's non-toxic.
