My friend gave me her 1 year female gerbil who she is unable to keep. I have a lone male gerbil who is 3 years old going on 4. Would they be able to live together (if they got along) without having a litter? Or can they still reproduce even at different ages?

You can never guarantee that a female won't have a litter, especially if she has previously had a litter.
Gerbils who have had a litter can reproduce up to the age of 2 or more, however if they 100% have not had a litter and are now over a year, it is very unlikely that they would get pregnant, especially if they are fat. But, this is not 100% so don't assume no babies, as they will certainly still have sex and scare the wits out of you.
Males can reproduce at virtually any age whether they have had a litter before or not.
