My gerbils love dried carrot slices, which I buy, but you can make them too. I found some instructions here (https://www.thespruceeats.com/drying-carrots-oven-method-1327540). This method would probably work for other vegetables and fruits too, such as beetroot, sweet peppers etc.
I've seen in some hamster groups some people make treat toys by sticking lots of seeds and nuts onto some cardboard with flour paste.
With my gerbils, I find they love simple things best. Some dried mealworms, plain oats or pumpkin seeds always go down well. For a special treat, mine get a bit of toast or cheese, and for an extra special treat they've had live locusts in the past.

here is a treat that I made earlier today... imgur.com/a/ZQET5aK I put flour paste on a roll and then added sunflower seeds, millet and some of their normal food :)
