How much do you feed your gerbil timothy hay? I just introduced mine to some, and she is crazy for it. (Unfortunately the pet store I bought her from, didn't tell us a lot, or that hay is important.) I don't want to give her too much, but the bag doesn't really say how much to give. She is 8 months old and very active.

I use hay as a substrate for my gerbils to burrow, dig and nest in so I use absolutely loads! Mine don’t eat it, they chew it and shred it to make bedding for their nest.

Mine don't eat timothy hay either. I add it to the cage between layers of wood shavings and it helps with tunnel support. They also shred it for nesting. It does tend to disappear as they carry it into their nest which may give the impression that it's being eaten, but in fact hay has little nutritional value for gerbils so they don't tend to eat it in large amounts. I give mine a couple of handfuls of hay every couple of weeks.
They do eat alfalfa hay, but that should only be given as a treat as it's high in protein and calcium.

I find they only eat the heads (the part that looks like wheat). They get pretty crazy over shredding it up tho.
I don't particularly think it matters how much you give them, or whether its there at all.
