Yes, I use flower and water for the things I make for my gerbils. It actually sticks surprisingly well, although you may need to hold the treats on for a few seconds to keep them in place

Yes flour and water glue is safe and I’ve used it on various occasions. 1 part flour to 1-2 parts water (depending on how strong it needs to be).

I do similarly most of the time, but if it needs to be stronger I do a little less water than flour and that works too.

Does this work with nut flour? More nutritious than just wheat flour - but more expensive I would imagine?

It probably does, I can't see why not. Victoria Raechel on youtube recommended buckwheat flour in a video I watched because it's better for them and that works.

I might be surprised, but I doubt a nut flour would work. Nuts are mostly fat, while a grain flour is mostly starch (especially if not a whole grain), which is what forms the glue--though, technically, buckwheat isn't a grain, being more closely related to rhubarb. Still starchy, though.
