Since our gerbil Misty passed away, we have managed to join our two separate tanks for Cookie, our remaining gerbil. She has always loved human company and enjoys coming out of the cage and running around on the sofa. We have noticed she sits at the door wanting to come out quite a lot and looks sad whilst waiting. I’ve read that an exercise ball is not ideal for a gerbil. We can’t keep getting her out because she then needs our undivided attention to ensure she is ok so any advice on keeping her entertained would be much appreciated. She currently has a wheel in each cage, plus we give her lots of chew stuff. Not sure what else we can do.

You could try a playpen, I still supervise my gerbils when they’re out, but since the area is secure and gerbil safe, I supervise pretty passively, and can watch tv or play on my phone while they’re running around.
