I have a pair of breeding gerbils. They have had 3 litters. The male is a dark himalayan colourpoint and the female is a pink-eyed white. So far all of the babies have been either colourpoint like dad, or PEW like mom. Do you think this will continue? Is it possible that no other colours will form?

It depends on how much recessive colour genes they have. The more they have the more colours can appear in the pups. After several litter you will be able to tell what the genetics are of the parents.
